Live & learn: I shall chill the flour next time for sure. And thank you for the rest of this. The way we source our seafood is abominable. It's why I try to eat mostly farmed fish. Most consumers, even conscientious ones, have absolutely no idea. Thank you, Julie!

And the liquid...It's astonishing the difference it makes. A much more reliable method than tempura batter for the same effect. I don't know how we deal with the fish issue. Farmed fish comes with its own problems: to feed one tonne of farmed fish takes 0.22 tonnes of whole wild fish. This essentially means that to produce 4.5 kg of farmed fish, 1 kg of wild fish is used, not to mention the need for antibiotics to control the sea-lice prevalent in the cages and the sea floor contamination from fish waste in poorly managed farms.

There are still questions around the status of some fish farms in Scottish waters and in South America. I look forward to reading more on this complex subject.
