I fear all those trucks packed to the brim with ripe succulent tomatoes that I have seen heading north from Puglia won't any longer make it to our barricaded shores. So I am glad to hear that tinned tomatoes might still do the trick.
Just used that herb mousse dolloped on a summer smoked trout salad. I recommend it. Also, leave out the herbs and salt, but add a teaspoon of vanilla extract and another of sugar to the yoghurt, and you have a light desert mousse to surround with a sauce of pureed strawberries!
Alas, those of us who live in San Francisco know that the cool summer temperatures and persistent fog limit the types of tomatoes we can grow successfully, but we're surrounded by warm areas that produce great heirlooms. Buying a sweet tomato of intense flavor at a farmer's market is easy (and the basil to go with it). It's the taste of summer for us.

The despair over more than tomatoes! San Marzano tinned ones try their best...
The herb mousse is a stroke of genius. Thank you.

Worth the price. But then, most farmer-grown food is. It's the processed food for which we pay a high price, in our health.
You bet!
Oohh I must get myself some love apples 🍎😋
NOW is the peak time! Don't forget the bunch of basil...and maybe some burrata...
