I once had a pine nut gelato in Rome - one of the best things I've ever tasted and never found it again though I always search.

I can't imagine how that must have tasted - toasty? Pine-y? Rich?

It was very pine-nutty and creamy- somewhat like how pistachio gelato tastes but much better and richer.

Sounds like it should be added to the gelato canon. Though pine nuts are even more expensive than pistachios. Meanwhile, what do you think of the potential of this? http://mysecondbreakfast.com/pine-nut-gelato-recipe/

My 🇫🇷 husband did his baccalaureate year in Rome. Needless to say, he became a huge fan of gelato.

I love that you weave personal experiences with food history together & add a recipe at the end. Thanks for your work. I’ve signed up for quite a few substacks, but yours is the only one I stop to read.

I'm incredibly honoured! Thank you. I hope I manage to keep you reading on...(A Baccalaureate subject in gelato should be obligatory...)

Ah so that’s what makes gelato so amazing. Best one I ever ate was in Trapani, Sicily. White chocolate but with none of the over sweetness usually associated with white chocolate. I love all the legends you mention!

Setting 2 daughters with toddler, baby, another baby on way test of making this when we are all together in La Baule next month. There is a fabled ice cream and galettes joint, Manuel, on sea front. Can you suggest gelato joint in a) a small town in the Perigord Noir called Le Baugue b) Athens c) Clapham d) Soho

Soho can only be Gelupo, on Archer St. Now has a booze license so you can combine your gelato with a negroni!

In any town anywhere, ask a local. They all have a favourite and you can test every one of them.
