Julia, small world! I had just finished reading Bruno, Chief of Police, for my Ojai book group and left it on the pool chair, when Pam Melone and Connie and Bailey came over to cool off in the pool and noticed it! I have to try the sandwich now that I know to use butter, not mayo. No recipe for a cucumber soup? I tried one that ended up too garlicky.

Get a butter with personality, preferably. Worth the extra cents. If you can't find a nice malted brown loaf, a good white loaf (perhaps not sourdough here) makes a great cucumber sandwich. Along with the Middle East where cucumber soups are basically thinned tzadziki and garlic is prominent in them, cucumber soups originated in Poland and Lithuania. Those give you the slightly tart whizzed up cucumbers/fresh dill/sour cucumbers/potatoes option! There's also a good hot cucumber soup based on chicken stock with the usual base of melted onion and thinned with cream. It works well cold when you might contemplate some chopped fresh mint - or tarragon (so long as it's French, not Russian which has no flavour).
