Loved the Maria Argyropoulina story Julia. The Venice cleric's reaction perfectly captures how intensely people resist new eating tech, even tho it seems ridiculous now. Funny how the fork went from being seen as an insult to God to becoming the mark of refinement within a few centuries. The trencher concept is genius from an efficiency standpoint, edible plates basically solved the dishwashing problem before ceramics became affordable. I tried eating Indian food with my hands last year after years of using forks and the flavor difference was actually noticeable, must be someting about direct contact or maybe just slowing down the eating process.

I’m happy to know that I’m not the only one with favourite cutlery .

Lotus leaf wrapped sticky rice parcels are so good. I’m currently in Singapore and they are temptingly everywhere! So many choices.

Oh, boy, do I envy you Singapore!! An absolute food Mecca! I'm so pleased we agree on cutlery - and that the recipe might appeal. The timbale is good just steamed in a ramekin.

Two of my children live in Singapore so I am a frequent visitor and always look forward to visiting favourite food spots and finding new ones. I do tend to get a little carried away when shopping for food with so many different things on offer. A bit like shopping in France! I have made quite good Lotus Leaf parcels at home too.

I think your point about eating with the hands improves the taste of food because it slows down the process is spit on. The eyes and the nose become much more engaged. And we do tend to eat faster and less thoughtfully with cutlery. As to what food is served in, thank heavens the trend for fries in toy wheelbarrows and steaks on slates seems to have passed.
